Japanese mochi pastry

A bright and original Japanese dessert that has conquered the whole world! Mochi is a recently popular rice flour pastry that is not at all difficult to make at home.
Ingredients (for 6 pieces): For the dough: Rice flour – 110 g Powdered sugar – 50 g Water – 180 ml Corn starch – 20 g for dusting Food colouring (optional) – 3 drops
For the filling: Cream cheese – 80 g Berries – 50 g
Dissolve the food colouring in the water. Add the flour and powdered sugar to it and mix well. The dough should turn out quite runny — that is how it should be.
Put the mixture into a frying pan over low heat and stir constantly until the dough becomes elastic.
Dust the table with starch and place the slightly cooled dough on it. Roll it into a log and cut into 6 pieces.
Shape each piece of dough into a circle a few millimetres thick.
Place 2–3 teaspoons of cream on each piece of dough and put a berry or a piece of fruit in the centre.
Gather and pinch the edges together so that you get a round pastry.
Arrange the mochi on a plate seam side down and brush off the starch. Put the pastries in the refrigerator for 30 minutes. Enjoy your meal!
