CHUDU with cheese and herbs

The Caucasus is a special, energetically charged place, with hospitable people and the most delicious dishes.
KUKMARA invites you to make CHUDA, a Dagestani national dish, using our recipe.
INGREDIENTS FOR 8 PIECES
Flour - 600 g (sifted) Salt - 1 tsp Water - 320 ml Adyghe cheese - 400 g (coarsely grated) Fresh dill - 10-15 g (finely chopped) Fresh parsley - 10 g (finely chopped) Fresh spring onion - 10-15 g (finely chopped) Walnuts - 30 g (broken by hand) Butter - 80 g (melted) Vegetable oil (to grease the rolling pin and work surface) Salt, pepper to taste
Combine the flour, salt and water and knead into a dough. It should not stick to your hands and should roll into a ball. If it sticks, add flour; if it does not come together, add water. Wrap in cling film for 30 min. Combine the cheese with the herbs, add the walnuts, salt and pepper and mix. Divide the dough into 8 pieces. Roll into balls. Grease the work surface and rolling pin with vegetable oil. Roll the dough into a thin oval flatbread. Spread the filling in a thin layer over one half, leaving a 1 cm border from the edge.
Cover with the second half of the dough and pinch the edges. Place on a dry, preheated frying pan and fry the chuda for 2 min on each side, until spots appear.
Generously brush the finished chuda with butter. Garnish with parsley before serving.
Enjoy your meal! P.S.: The parsley can be replaced with more aromatic coriander.
