Just a few simple ingredients and crispy-on-the-outside eggplants are on your table.
Ingredients: Eggplants – 3. Salt – 1 tbsp.
For the batter: Eggs – 3. Salt – 1/2 tsp. Pepper – 1/2 tsp. Paprika – 1/2 tsp. Flour – 100 g. Vegetable oil (for frying) – 100-150 g.
For the sauce: Sour cream – 100 g. Garlic – 1 clove. Dill – a bunch.
Wash the eggplants and first cut them into rings about 1 cm thick, then cut each ring into 4 equal sticks. Salt the sliced eggplants well and leave for about 10 minutes.
Make the batter: salt the eggs, add pepper, paprika and flour, and whisk well.
Rinse the eggplants to remove excess salt, put them in the bowl with the batter and stir.
Heat the vegetable oil well in a sauté pan and add the eggplant sticks. Fry over medium heat until golden brown. Then place the fried eggplants on a paper towel so the excess fat and oil drain off quickly.
For the sauce, mix the sour cream with finely chopped garlic and dill.
Serve the fried eggplants with the sauce, and seasonal vegetables and herbs if desired.
Enjoy your meal!
